Community Garden harvest Yacons
The Dumbleyung Community Garden harvested their first Yacons on Tuesday May 7. A member of the sunflower family, a Yacon is known as an ‘underground’ apple. Crispy and sweet it is a similar shape to a sweet potato, can be added to salads or stir-frys and is known for its great health benefits as it is high in antioxidants and potassium.
A decent harvest for the first dig, the community garden will replant the Yacons and hope for another harvest later in the year. If you would like to taste a Yacon come along to the Community Garden tomorrow Thursday May 9. All welcome!
